A special thank-you to food historian Stella Fong for helping shine a light on the early Chinese influence in Billings’ restaurant scene. Her work preserves the stories of the families and cafés that shaped how this city ate long before the boom of modern dining. Her book is called Historic Restaurants of Billings.
One of those beloved places was the New Moon Café, a family-run Chinese and American café on the south side, near the corner of South 27th Street and Minnesota Avenue. Operated by members of the Lee family, New Moon served railroad workers, neighbors, and generations of Billings families with plates of classic chop-suey-era comfort food.
